    Chunky Guacamole

    Leah loves avocados, so she was eager to try this guacamole recipe several years ago when a friend gave it to her. "It's a special treat for me, and it’s kind of a healthy treat," she says.

    Ingredients

    • 2 medium plum tomatoes, finely chopped
    • 2 cloves garlic, minced
    • 2 Tbsp. lime juice
    • 1 Tbsp. olive oil
    • ¼ tsp. salt
    •  tsp. ground black pepper
    • 2 ripe avocados, seeded, peeled, and coarsely mashed
    • ¼ cup snipped fresh cilantro
    • Tortilla chips

    Directions

    In a bowl, combine tomatoes, red onion, garlic, lime juice, olive oil, salt, and pepper. Gently stir in avocados and cilantro. Cover and chill 1 hour. Serve with tortilla chips.

    Traffic Light Salsa

    Traffic Light Salsa

     

    The colors in this salsa — red, yellow, green — signify its fun name. "It's a very colorful dish with a catchy name that we often serve as an appetizer with tortilla chips and it always gets rave reviews," writes Sophie.

    Ingredients

    • 1 red bell pepper, seeded and diced
    • 1 yellow bell pepper, seeded and diced
    • 1 green bell pepper, seeded and diced
    • ½ cup yellow onion, diced
    • 1 16-oz. can corn, drained
    • 1 15-oz. can black beans, drained
    • 1 clove of garlic, minced
    • 1 tsp. fresh cilantro
    • ¼ cup olive oil
    • 4 Tbsp. red wine vinegar
    • 1 tsp. lime juice
    • 1 tsp. salt

    Directions

    Combine peppers, onion, corn, and black beans in large bowl. In a separate bowl, combine garlic, cilantro, olive oil, vinegar, lime juice and salt. Toss all ingredients together and serve with chips.

     

    Blue Burger Barbeque

    "Out here on the ranch, when the grandkids come to visit, they want something different and special," writes NancyLee. "It was the same as when I was a kid going to my grandma’s. I always knew there would be something special just for us, and this is what it was. The grands love it and so does their Poppy."

    Ingredients

    Meat Mixture

    • 1½ lbs. ground beef
    • 2 Tbsp. mayonnaise
    • 1 tsp. garlic salt
    •  tsp. pepper
    • ¼ tsp. dry mustard
    • 5 dashes Worcestershire sauce

    Stuffing Mixture

    • ½ lb. cooked, crumbled bacon
    • 2 Tbsp. garlic salt
    • 2 Tbsp. mayonnaise
    • Parsley sprigs
    • ½ cup blue cheese, crumbled

    Directions

    Combine meat mixture ingredients and form into 12 thin patties. Combine stuffing mixture and spoon onto six patties. Place remaining patties on top. Press meat edges together. Grease grill lightly. Place patties on grill. Sprinkle with garlic salt. Cook until done to your taste.

    Amish Wings

    Get ready to feed a crowd with this wings dish that yields about 50 pieces.

    Ingredients

    • 1 cup grated Parmesan cheese
    • 2 Tbsp. dried parsley
    • 1 Tbsp. dried oregano
    • 2 tsp. paprika
    • 1 tsp. salt
    • ½ tsp. pepper
    • ½ cup butter
    • 4 pounds chicken wings

    Directions

    Preheat oven to 350 degrees and line a shallow baking pan with foil. Combine Parmesan cheese, parsley, oregano, paprika, salt, and pepper in a bowl and stir mixture well. Melt butter in a shallow bowl. Dip each wing in butter, roll in the cheese and seasoning mixture, and arrange in the foillined pan. Bake for 1 hour. Yields about 50 pieces.

    Froggy Burger

    Froggy Burger

     

    Adam, known as "Froggy" to his friends, has created a hamburger that's so popular among his friends that they've given it a name: The Froggy Burger.

    "It's one that everybody comes back to. It's a hot burger and really spicy," he says. "Everybody loves it."

    Ingredients

    • 2 pounds hamburger
    • 2 eggs
    • 1 bag of thick potato chips (he prefers Wavy Lay's)
    • 1 Tbsp. minced garlic
    • 1 Tbsp. black pepper
    • 1 Tbsp. crushed red pepper
    • ¼ cup minced red onion
    •  cup Italian seasoning
    • 2 Tbsp. Worcestershire sauce
    •  cup chopped jalapeños

    Directions

    Place hamburger in large bowl. Beat eggs and pour over hamburger. Place a large handful or two of potato chips into a plastic sandwich bag and crush until you have about 1 cup of crushed chips. Use thick chips; thin ones don't add enough texture. Tortilla chips (such as Doritos) work well, too. Add remaining ingredients and mix well. Patty out four burgers and grill to taste.

    Makes 4 burgers.

    Cook's tips: "To make the burger just amazing, put a slice of pepper jack cheese on it when you take it off the grill," Pogue says. "It gives it a little more spice."

    He also suggests putting a fried egg on the hamburger patty before serving. "It's just really good," he explains.

    Mimi's Potato Salad

    Mimi's Potato Salad

     

    "This dish is a special one in our family created by Rebecca Rankin Sherling, lovingly known as 'Mimi' by all the grandchildren. My children ask for it every time they come home for a visit".

    Ingredients

    • 5 large white potatoes
    • 2 cups mayonnaise
    • 10 oz. jar of dill relish (drained)
    • 10 oz. jar of green olives stuffed with pimento (chopped and drained)
    • 1 tsp. salt (or to taste)
    • 1½ tsp. McCormick's seasoned pepper blend

    Directions

    Cover whole potatoes in large pot with salted water. Boil until tender when pierced with a fork. Let cool. Peel and cube potatoes. Add to peeled and cubed potatoes: Drained dill pickle relish. Drained and chopped olives. Mix mayonnaise, salt and pepper together and add to potato mixture. Refrigerate.

    Serves 8.

    Caramel Apple Brownies

    Caramel Apple Brownies

     

    It's hard to believe that anything could improve the taste of these brownies, but Rose has a suggestion: "They're great with ice cream," she writes.

    Ingredients

    • 2 cups flour
    • 1 tsp. baking soda
    • 1 tsp. baking powder
    • ½ tsp. salt
    • 3 tsp. cinnamon
    • 1 cup butter softened
    • 2 cups sugar
    • 2 eggs (lightly beaten)
    • 2-3 apples (peeled, cored, and chopped)
    • 1 cup chopped nuts
    • ¼-½ cup caramel (optional)

    Directions

    Sift together dry ingredients; set aside. Mix butter, sugar, and eggs together; then mix in apples and nuts. Fold dry ingredients into apple mixture. Pour into greased 9x13 pan. Drop spoonfuls of caramel on top and drag a fork or knife through. Bake at 350 degrees for 40-45 minutes. Cool and serve.
