Wash with hot water: Use hot water and mild dish soap to clean the griddle surface. Avoid abrasive detergents. Rinse and dry: Rinse the griddle thoroughly and dry it completely to prevent rust. Re-season if necessary: For cast iron griddles, apply a thin layer of cooking oil or cast iron conditioner after drying and heat it until it starts to smoke. This helps maintain the seasoning and non-stick properties. Wipe off excess oil: Once the oil has smoked, turn off the heat and wipe off any excess with a clean paper towel. Clean the hard cover: Wipe down the hard cover with a damp cloth and mild detergent. Make sure it is completely dry before closing or storing. Important Notes: Do not use abrasive materials: Avoid using steel wool or harsh detergents, as they can damage the griddle surface. Avoid ice: Do not use ice to cool down the griddle, as it can cause thermal shock and potential damage.     Initially told it didn't need seasoning. Have used several times, now food sticks a lot. Is it too late to season?
