Would this item be horse-safe? (No sharp edges). Can the "vinyl coating" be chewed off? Can two normal people set it up themselves?

The post do not have sharp edges. The Vinyl paint is baked on the steel so it could possibly be chewed off. It will take a Minimum of 3(preferably 4) people to assemble
