Homemade Chicken Noodle Soup and Noodles Recipe

Submitted by Mary K. Anderson, Bricelyn, MN

Mary adds something extra special to her chicken noodle soup, her own homemade noodles.

  • 8 cups of water or enough to cover chicken
  • 2-3 large chicken breasts
  • 3 cans chicken broth
  • 6-8 chicken bouillon cubes
  • Homemade noodles (recipes below)
  • 2 ribs of celery, chopped into pieces
  • 3 carrots, sliced into wafers
  • Diced onion, optional

  • 4 eggs (3 separated)
  • 3 Tbsp. cold water
  • 1 tsp. salt
  • 2 cups flour

Pour the water into a large soup kettle. Place the chicken into the water and cook it until the chicken is done. Save broth. Shred chicken. Add the canned broth and bouillon cubes to homemade broth. Add homemade noodles and cook until tender. Add celery, chicken, carrots, and onion, if using, and cook until the vegetables are tender. Serves 8-10.

To make the noodles, beat together 3 egg yolks and 1 whole egg. Add cold water and salt. Stir in flour. Combine to make a soft dough, then divide into two equal parts. Roll out each part on a lightly floured surface as thin as you would like your noodles. Use a pizza cutter to cut the dough into strips. Add to your favorite soup recipe.
