Cream of Pumpkin Soup - Tractor Supply Co. Good holiday soup starter

Cream of Pumpkin Soup

“This is a good holiday soup starter, very easy and very nutritious,” writes Marlene Giglio, of South Boston, Va. “This soup is also low-fat.”

 

Ingredients:

  • 1 15-oz. can pure pumpkin (use 2 cans if you like a thicker soup)
  • 1 14.5-oz. can chicken broth
  • 1 12-oz. can low-fat evaporated milk
  • ½ cup applesauce
  • ½ tsp. onion powder
  • ¼ tsp. garlic powder
  • Salt and pepper to taste
  • ¼ tsp. nutmeg

 

Directions:

  1. Combine all of the ingredients in a saucepan.
  2. Bring to a boil, then reduce heat and simmer uncovered about 15-20 minutes.

Serves 4-6.
