    Spinach Salad

    Judi first tried this recipe more than 25 years ago when her next-door neighbor in Pennsylvania served it, and she’s stuck to the original ingredients. "I kind of like things simple and basic," she says. "Sometimes if you add too much stuff to recipes, you don’t get the flavor of everything."

    Ingredients

    Salad

    • 1 lb. washed fresh spinach
    • Chopped fresh mushrooms to taste
    • 6 large green onions, chopped
    • 1 chopped clove garlic
    • 4 chopped hard-boiled eggs
    • 8 slices fried crumbled bacon

    Dressing

    • ½ tsp. salt
    • ½ cup oil
    • ¼ cup vinegar
    • 3 tsp. lemon juice

    Directions

    Mix dressing ingredients; set aside. Toss first four ingredients together. Add dressing ingredients to salad and toss. Let sit ½ hour before serving. Add eggs and bacon just before serving.
