Spicy Potatoes With Tomato Salsa

Frances created this recipe from what she had on hand. "It's a family favorite because it always tastes slightly different each time; is spicy, not hot; and is almost a meal unto itself," she says.


  • 3 Tbsp. olive oil
  • 2 Tbsp. lime juice
  • 1 tsp. Tabasco or to taste
  • 2 tsp. paprika
  • 2 lbs. potatoes, cut into quarters


Preheat oven to 425 degrees. Mix the first four ingredients in a bowl. Add potatoes and stir, coating them completely. Place them on a baking tray and pour the rest of the mixture on top. Cook 1 hour, turning them about halfway through and re-coating with the mixture. They will be crispy when cooked. Top with Tomato Salsa and serve hot or cold.

Tomato Salsa


  • 1 lb. tomatoes, either cherry tomatoes cut in half or regular tomatoes cut into 1-inch pieces
  • 2 large green onions finely chopped
  • 1 Tbsp. olive oil
  • 1 Tbsp. lime juice
  • Parsley, mint or sage leaves (optional, to taste)
  • Salt and pepper, to taste


Combine first five ingredients. Add salt and pepper. Place cooked potatoes in serving dish and top with salsa.
