    Pasta with Chicken and Zucchini Recipe

    "This has been a hit with my husband," writes Carole. "The flavors all work well together."


    • 1 16-oz. package spiral pasta
    • 2 cups heavy whipping cream (or half and half for less calories)
    • 1 Tbsp. butter
    • 2 cups (16 oz.) shredded Mexican cheese blend or cheddar cheese
    • 1 small chopped onion
    • 1 clove of minced garlic
    • 5 Tbsp. olive oil, divided
    • 2 medium zucchini, julienned
    • 2 medium yellow summer squash, julienned
    • 1¼ tsp. salt, divided
    • â…› tsp. pepper
    • 1 lb. boneless skinless chicken breasts, sliced long
    • ¼ tsp. fresh or dried rosemary, crushed
    • ½ tsp. each dried basil, marjoram, and savory is optional
    • ½ tsp. rubbed sage


    Cook pasta according to package directions. Meanwhile, heat cream and butter in large saucepan until butter melts. Add cheese; stir until cheese is melted. Rinse and drain pasta; add to cheese mixture. Cover to keep warm. In a skillet, sauté onion and garlic in 3 Tbsp. of oil until onion is tender. Add all squash, cook until tender. Add 1 tsp. of salt and pepper; cook until tender. Remove and keep warm. Add remaining oil to skillet; cook chicken with herbs and remaining salt until juices run clear. Place pasta on a serving platter; top with chicken and squash.
