Introduced by New Mexico State University in 1975 and listed in the Guinness Book of World Records, this is the world's largest chile pepper. The compact plant produces big yields of giant, mildly hot peppers with a Scoville rating of 2,500 to 3,000. Pick peppers when green. The large fruit make these perfect peppers for chile rellenos, but they're also delicious in salsa, sauces, enchiladas, and any Mexican-inspired recipes that need some heat.
