Spring feels like the perfect time to switch from the heavy comfort foods of winter to lighter dishes. These tasty, and very healthy, recipes from our Out Here readers create a lovely meal or can be enjoyed as individual dishes all season.


Lemon Linguini

 

"This pasta is wonderful just plain and simple, even good cold," writes Marlene Lemley, of Tarrs, PA. "You can add a variety of things to make it more tantalizing — asparagus spears (steam 3-4 minutes, do not cook), steamed shrimp, grilled chicken strips, chopped tomatoes, or slivered fresh basil."
