Spring feels like the perfect time to switch from the heavy comfort foods of winter to lighter dishes. These tasty, and very healthy, recipes from our Out Here readers create a lovely meal or can be enjoyed as individual dishes all season.

Lemon Linguini

"This pasta is wonderful just plain and simple, even good cold," writes Marlene Lemley, of Tarrs, PA. "You can add a variety of things to make it more tantalizing — asparagus spears (steam 3-4 minutes, do not cook), steamed shrimp, grilled chicken strips, chopped tomatoes, or slivered fresh basil."

Baked Salmon and Asparagus

Erica Ettwein, of Cross Plains, IN, makes this dish for her family at least once a week. "Even our kids love it and ask for seconds! It’s delicious, simple, and healthy, too," she writes.

Spinach Salad

Judi Delph, of Russellville, TN, first tried this recipe more than 25 years ago when her next-door neighbor in Pennsylvania served it, and she's stuck to the original ingredients. "I kind of like things simple and basic," she says. "Sometimes if you add too much stuff to recipes, you don’t get the flavor of everything."

Gooseberry Cheesecake

Nina Phillips of Bolivar, MO, prefers her cheesecake made with the less-common gooseberry. "For more gooseberry flavor," she writes, "double the berry mixture."
