    Karen Walz, of Elk River, Minn., who got this recipe from her daughter, loves it because it is so versatile. If her guest doesn't like ham, she'll substitute with sausage or bacon.

    "You can pretty much throw anything in," she says. "It depends on who's eating."

    Cottage Cheese Pancakes


    "This is a great way for kids to have plenty of protein for breakfast as you are getting them off to school," writes Lonna Field, of Brooksville, Fla. "It is also a terrific way to use up old cottage cheese."

    She also suggests doubling the recipe to keep the extra pancakes in the refrigerator for quick snacks.

    Baked Eggs In Maple Toast Cups


    Trase Passantino, of Fenton, Mich., found this recipe in one of the hundreds of vintage cookbooks that she's collected.

    "It's a good one for when you have an influx of eggs in the spring," she says, noting that they have about 70 chickens and ducks.

    She, in fact, prefers duck eggs in this recipe — "They have more of a buttery, rich taste" — but her husband prefers chicken eggs.
