    Yummy Apple Sweet Potato Bake

    Cathy found this dish in a stack of recipes given to her by an aunt. It frequently sparks comments. "People usually say how much they like it and then ask what it is, because they haven't really tasted anything with that combination of flavors before," she writes.

    Ingredients

    • 4 medium sweet potatoes
    • ½ cup quick-cooking rolled oats
    • ½ cup packed brown sugar
    • 3 Tbsp. flour
    • 2 to 3 Tbsp. butter, softened
    • 1 (16 oz.) jar chunky applesauce
    • 1 tsp. ground cinnamon, divided
    • ¼ tsp. nutmeg, divided

    Directions

    Peel the sweet potatoes; cut into 1½-inch chunks. Place in saucepan and add enough water to cover. Cook 10-12 minutes or until tender, then drain. Preheat oven to 375 degrees. In a small bowl combine oats, brown sugar, and flour. Use a fork and cut in butter until crumbly; set aside. Spread half of the applesauce in greased 2-quart square baking dish. Sprinkle with ½ tsp. of the cinnamon and ½ tsp. of the nutmeg. Top with 3 Tbsp. of the oat mixture. Place sweet potatoes on oat mixture. Spoon last half of applesauce over sweet potatoes, and sprinkle with remaining cinnamon and nutmeg. Top with remaining oat mixture. Bake uncovered for 30 to 35 minutes or until heated through. Top with sugar or spices of your choice. Serve immediately.
