    Whole Wheat Cranberry and Apple Muffins

    Cindy believes in cooking; her dishes are tasty and healthy. "They're good and good for you," she writes about her muffins.

    Ingredients

    • 1½ cups whole wheat flour
    • ¼ cup milled flax seeds
    • ½ cup Splenda (or convert for sugar)
    • 2 tsp. baking powder
    • ½ tsp. baking soda
    • ½ tsp. salt
    • 1 egg beaten
    • 3 Tbsp. olive oil
    • ½ cup milk
    • ¾ cup apples
    • 1¼ cup dried cranberries
    • ¾ cup almonds cut in half

    Directions

    Mix dry ingredients together in bowl. Set aside. In second bowl, combine egg, olive oil, milk. Mix in dry ingredients. Add cranberries, apples, and nuts. Batter will be thick. Fill muffin cups full and bake at 400 degrees for 20 minutes. Makes 12 muffins.
