    Twice-Baked Sweet Potatoes

    “Here’s an easy-to-prepare veggie dish kids and adults both gobble up,” writes Marie Sanborn. “Sweet potatoes are very nutritious, high in fiber, vitamin A, antioxidants, calcium and just plain ol’ yum.”


    • 5 large smooth sweet potatoes
    • 3 Tbsp. brown sugar
    • ½ tsp. nutmeg
    • ½ tsp. cinnamon
    • ½ cup orange juice


    Preheat oven to 375 degrees. Spray cookie sheet with non-stick baking spray. Cut sweet potatoes in half lengthwise. Arrange on baking sheet, cut-side down. Spray skins. Bake 35-40 minutes until soft. Cool. Mix brown sugar, spices, and orange juice in sauce pan. Simmer for 15 minutes. Scoop out sweet potato flesh and put in blender. Add orange juice mixture. Process until smooth. Re-stuff potato skins. Bake for 25 minutes.
