    Tomato Pudding

    Linda remembers her mother making this treat when she was young. "It was always my favorite, and when she made it, I felt like it was made just for me," she writes.

    Ingredients

    • 1 quart stewed tomatoes
    • 2 slices of bread or 2 day-old biscuits
    • Sugar to taste
    • Salt to taste
    • 1 Tbsp. butter or margarine

    Directions

    Pour stewed tomatoes into a mixing bowl. Crumble up bread and add to tomatoes. Add sugar, salt. Mix well and pour into a greased 8x8 pan. Place small bits of butter or margarine on top. Bake at 350 degrees for 30 minutes (tomatoes will bubble around the edges). Let sit for 5 minutes before eating.

    Serves 6-8.
