Terry's Salsa Meatloaf

When Terry noticed a meatloaf recipe on the back of a salsa jar, she jumped at the chance to try a different version of a traditional American dish.

She followed the recipe loosely while improving and modifying it to fit her family's palate. She added wheat germ — "The wheat germ helps hold it together, but you can't even taste it" — more salsa, and she occasionally substitutes ground turkey for ground beef. Terry has passed her recipe on to family and friends, and they love it, too.


  • 1¾ - 2 lbs hamburger meat
  • 1 egg
  • 16 oz. jar of your favorite chunky salsa
  • Garlic powder to taste (about 1 tsp.)
  • ½ cup of quick oats
  • ¾ cup wheat germ


Combine all ingredients in a large bowl and mix thoroughly, preferably by hand. Place in loaf pan. If your loaf pans are smaller, divide and place in two loaf pans. Bake at 375 degrees for 1.25 hours. Serving idea; pour some warmed salsa over a slice or two of meat when served.
