    Sweet Onion Casserole

    "This recipe is truly a favorite of our family," writes Judy. "We grow a lot of sweet onions and this is an easy-to-prepare recipe with a mild onion flavor. Delicious!".

    Ingredients

    • ½ cup long-grain rice, uncooked
    • ¼ cup melted butter
    • 7-8 cups sweet onions, chopped coarsely
    • 1 cup grated Swiss cheese
    • â…” cup Half-and-Half
    • 1 tsp. salt

    Directions

    Cook rice in 5 cups boiling water for 5 minutes. Drain; set aside. Cook onions in butter in large skillet until limp, but not browned. Combine all ingredients, mix well, and pour into greased 2-quart casserole dish. Bake at 350 for 1 hour.
