    Summer Salsa

    Dawn made this fresh summer salsa especially for her husband, because it was one of his favorites, she says.


    • 1 clove garlic
    • 2 tsp. kosher salt, divided
    • 4 medium ripe tomatoes, cored and diced
    • ¼ medium red onion, finely diced
    • 1 jalapeño pepper, stemmed and minced (with seeds for more heat)
    • ¼ cup chopped fresh cilantro
    • White corn tortilla chips, for dipping


    Smash the garlic clove, sprinkle with 1 tsp. salt, and, with the flat side of a large knife, mash and smear the mixture to a course paste. Combine the garlic mixture, tomatoes, onion, jalapeño, and cilantro in a serving bowl. Season with the remaining 1 tsp. salt, adding more to taste, if necessary. Serve immediately with tortilla chips (or use as a burger topping), or to allow the flavors to blend, cover and set aside for one hour at room temperature.

    Serves 4-6.
