Stuffed Tomatoes on the Grill

Peg and her family love summer grilling, especially around Father's Day.

"We always make Father's Day a special occasion," she writes. "All the kids and grandkids come out to our acreage and we celebrate the day. Dad grills for everyone and it is a special family get-together. And, of course, we serve anything ready from the garden, fresh or grilled, as well."

This is one of her father's favorite recipes.


  • 6 medium-sized tomatoes
  • 3 cups mozzarella cheese, shredded
  • 3 Tbsp. fresh basil, finely chopped
  • 3 cups zucchini, sliced and chopped
  • 4½ cups seasoned croutons, cut into ½-inch pieces
  • ¼ tbsp. fresh ground pepper


Cut tomatoes in half crosswise and scoop out pulp, leaving ¼-inch shell. Chop pulp and drain. Drain tomato shells on paper towels while preparing stuffing. Stir mozzarella cheese, basil, zucchini, croutons, and pepper in large bowl. Add tomato pulp and mix well. Divide mixture among tomato shells. Place filled tomato halves on heavy-duty aluminum foil sprayed with cooking spray. Place on grill. Grill 20-30 minutes or until tomatoes are hot and cheese is melted.

Serves 6-8.
