    Strawberry Bread

Submitted by Marketa S. Smith, of Fuquay-Varina, N.C.

Marketa shares a recipe from her grandmother, Lucy June Robinson, whose "love and memory live on through many of her delicious recipes."

    Ingredients

    • 4 eggs
    • 1¼ c. oil
    • 2 cups sugar
    • 3 cups flour
    • 1 tsp. soda
    • 1 tsp. salt
    • 2 tsp. cinnamon
    • 2 (10-oz.) package of frozen strawberries or 2 cups fresh strawberries, mashed (measure after mashing)
    • 1¼ cup nuts, optional

    Directions

Beat eggs well. Add oil and sugar. Beat. Add all dry ingredients, strawberries, and nuts, if desired. Pour into two greased and floured loaf pans. Bake at 350 for about 1 hour, or until a wooden skewer or toothpick comes out clean. Cooking times may vary for ceramic or glass pans.

    Makes two loaves.
