    Spicy Chicken Tortilla Soup

    This spicy soup is an original by Tom and Pat. "We developed this recipe through trial and error," they write. "It is a favorite with our family and friends."



    • 1 medium onion
    • 1 clove garlic
    • 2 Tbs. vegetable oil
    • 3 cans chicken broth
    • 1 tsp. cayenne pepper
    • ¾ tsp. basil
    • 1 tsp. cilantro
    • ½ tsp. salt
    • ¼ tsp. pepper
    • 15 oz. can tomato sauce
    • 2 cups chopped cooked chicken


    • Tortilla chips
    • Monterey Jack shredded cheese
    • Sour cream
    • Avocados


    Sauté onion and garlic. Add the remainder of the ingredients. Bring to a boil then reduce heat to a simmer (Can be served immediately). In each serving bowl, crumble up ¼ cup of tortilla chips and top with shredded cheese. Pour soup into bowl. Top soup with one large chip, a dab of sour cream, and slice of avocado.
