    Southern Pride Cookies

    When Marcia Norris, of Gainesboro, Tenn., moved from the Midwest to the South, she "southernized" a cookie recipe handed down from her grandmother.

    "The pecans were not in the original recipe," she says. "I added pecans, which are southern, and I renamed the recipes."


    • 1 cup brown sugar
    • 1 cup sugar
    • 1 cup shortening
    • 2 eggs
    • 1 tsp. vanilla
    • 2 cups flour
    • ½ tsp. salt
    • 1 tsp. baking soda
    • 1 tsp. baking powder
    • 1 cup flaked coconut
    • 3 cups rolled oats
    • ½ cup chopped pecans
    • 6 oz. chocolate chips


    Preheat oven to 350 degrees. Cream sugars and shortening. Add eggs and vanilla. Set aside.

    Sift together flour, salt, baking soda, and baking powder. Add to shortening mixture. Add coconut, oats, pecans, and chocolate chips. Mix well. Drop by teaspoon onto a greased cookie sheet and flatten with the bottom of a glass. Bake for 8-10 minutes. Cool.
