    Southern Hoecake

    To accompany the turnip greens and pot liquor recipe. Crumble at least one hoecake into your bowl of turnip greens.

    Ingredients

    • 1 Tbsp. cooking oil
    • 1 cup sifted corn meal (not self-rising)
    • 1/2 tsp. salt
    • Water

    Directions

    Put iron griddle on stove, pour in oil and let it get hot before adding batter. Combine salt and corn meal and add enough water to make meal thin enough to pour. Pour batter onto griddle to make small circular cakes, about 3 to 4 inches in diameter. Fry until bottom browns, then flip to brown the other side until crispy. Remove from oil and dry on absorbent towels.
