Soft Turkey Tacos

The flavor of the turkey makes this dish a favorite, says Jone.

"Every time I serve it to guests, they are amazed that it is so simple and delicious," she writes.


  • 2 or 3 lbs. ground turkey
  • Salt and pepper to taste
  • 1 clove garlic, chopped
  • Oregano to taste
  • 2 cans whole pinto beans (I prefer those that come with jalapenos)
  • Corn tortillas (As many tacos as your family will want; we eat about 4 tacos each.


Add salt, pepper, garlic, and oregano to turkey and cook on the stovetop (you do not need to add oil; a little water works just fine). When turkey is done, add beans, then set aside and keep hot. Chop toppings of your choice and place in separate bowls. We prefer cheese, tomatoes, onions, jalapenos, cilantro, and avocado.  Heat corn tortillas either in a toaster oven (no more than 2 minutes) or in a stovetop pan with a lid. Heat them slowly so they do not burn or get too crispy; the lid holds in the moisture.  Make a taco by spooning meat and beans onto a tortilla and sprinkling with cheese and other toppings of your choice. Fold tortilla in half.
