Salted Nut Bars

Ellen took a long-ago state fair prizewinning recipe, added a few of her own ingredients, and created a recipe she makes primarily for holidays and special occasions. Ellen, a former school cafeteria cook who has baked more than her share of cookies, prefers bar cookies to drop cookies.

Ingredients

First Layer

  • ½ cups flour
  • ½ cup quick oats
  • 1½ cups packed brown sugar
  • 1 cup soft butter
  • 1 tsp. salt

Second Layer

  • ½ cup light corn syrup
  • 2 Tbs. butter
  • 1 Tbs. water
  • 1 cup butterscotch chips
  • ½ cup packed brown sugar

Directions

Bake this first layer at 350 degrees for 10-12 minutes. Stir ingredients for second layer and melt until blended. Pour 2 cups mixed nuts over baked crust. Pour second layer syrup over nuts and return to oven to bake 8-10 minutes. Cool completely and cut into small bars with pizza cutter.
