Roasted Green Beans With Peppers And Onions

Diana likes to try new, healthy recipes. "I like to have a lot of low-fat, low-calorie dishes and this is one of them," she says. "It's a new recipe that we started using last year, and we've really enjoyed it."


  • 1 lb. whole frozen (thawed) or fresh green beans (ends trimmed)
  • 1 red pepper, cut into thin strips
  • 1 large onion, cut into thin strips
  • 1 yellow pepper, cut into thin strips
  • ½ cup balsamic vinaigrette dressing
  • ½ cup shredded low-moisture part-skim mozzarella cheese


Preheat oven to 400 degrees. Toss vegetables with dressing in a large roasting pan. Bake 15 minutes, stir, then bake an additional 15 minutes or until vegetables are tender. Sprinkle with cheese. Bake an additional 2-3 minutes or until the cheese is melted.

Serves 6.
