Pumpkin Cookies Recipe

Deb got this unique recipe from her maternal grandmother, Teresa (Brinsky) Arunski, who lived to be 101.

Ingredients for Pumpkin Cookies

  • 1 cup shortening
  • 1½ cups brown sugar (packed)
  • 2 eggs
  • 1 cup canned pumpkin
  • 2 cups sifted all-purpose flour
  • 4 tsp. baking powder
  • 1¼ tsp. salt
  • 1 tsp. cinnamon
  • ½ tsp. ginger
  • ¼ tsp. nutmeg
  • ¼ tsp. allspice

Orange Icing

  • 3 cups confectioner’s sugar
  • â…“ cup butter
  • ¼ cup orange juice
  • 1 tsp. grated (fine) orange peel

Directions

Preheat oven to 400 degrees. Cream together shortening and sugar until fluffy. Add eggs one at a time, beating after each addition. Blend in pumpkin. Set aside. Combine flour, baking powder, salt, cinnamon, ginger, nutmeg, and allspice and stir well. Add the flour mixture to the shortening mixture and blend well. Drop by tablespoons on greased cookie sheet. Bake for 10 to 12 minutes. Cool on racks.

To make the icing, blend sugar and butter until very smooth. Stir in the orange juice and peel. Blend thoroughly. When cookies are completely cooled, ice with Orange Icing.
