Orange Breakfast Muffins

"These are very good and have been our favorites for years," writes Jami of her orange breakfast muffins.


  • 19 oz. buttermilk baking mix
  • 5 oz. all-purpose flour
  • 7 oz. granulated sugar
  • 3 large eggs
  • ¾ cup plain yogurt
  • ¾ cup orange juice
  • 1 Tbs. grated orange peel
  • 2 cups (12-oz. bag) white chocolate morsels
  • ¼ cup finely chopped macadamia nuts


Preheat oven to 350 degrees. Lightly grease muffin pan. Combine baking mix, flour and sugar in large mixing bowl. Add eggs, yogurt, orange juice and orange peel; beat until well blended. Stir in white morsels. Divide batter into prepared muffin pan. Sprinkle tops with nuts. Bake for 20-22 minutes or until golden. Remove to wire rack for 5 minutes. Serve warm.

Makes about 12 muffins.
