    Onion Pie Recipe

    Arlene acquired this recipe after a friend served it one evening. "It was different, and I loved it," she recalls. Onion pie now has a place on the Rooneys' table at holidays and special occasions.

    Ingredients

    • ¾ lb. green beans
    • 1 stick butter
    • 4 medium-sized Vidalia onions, thinly sliced
    • 4 eggs
    • 1 cup sour cream
    • ¼ tsp. salt
    • ½ tsp. pepper
    • 1 pie shell — unbaked
    • Grated Parmesan cheese to taste

    Directions

    Sauté onions in butter. Set aside. Combine eggs and sour cream. Add onion mixture. Add salt and pepper and pour into pie shell. Sprinkle cheese on top. Bake for 20 minutes at 450 degrees, then for 20 minutes at 325 degrees.
