Mimi's Potato Salad

"This dish is a special one in our family created by my mother-in-law, Rebecca Rankin Sherling, lovingly known as "Mimi" by all the grandchildren," writes Eileen. "My children ask for it every time they come home for a visit."


  • 5 large white potatoes
  • 2 cups mayonnaise
  • 10 oz. jar of dill relish (drained)
  • 10 oz. jar of green olives stuffed with pimento (chopped and drained)
  • 1 tsp. salt (or to taste)
  • 1½ tsp. McCormick's seasoned pepper blend


Cover whole potatoes in large pot with salted water. Boil until tender when pierced with a fork. Let cool. Peel and cube potatoes. Add to peeled and cubed potatoes: Drained dill pickle relish. Drained and chopped olives. Mix mayonnaise, salt and pepper together and add to potato mixture. Refrigerate.

Serves 8.
