    Jen's Double Chocolate Cookies Recipe

    Jennifer created this recipe when she was making regular chocolate chip cookies and didn’t have all the ingredients. “The chocolate (bits) do something to intensify the chocolate flavor,” she writes. Her children particularly love this recipe. “I'm lucky if a batch will last until the next day,” she writes.


    • 1 cup butter, softened
    • 2 cups sugar
    • 2 eggs
    • 2 tsp. vanilla
    • 1 tsp. baking soda
    • ½ tsp. salt
    • ¾ cup powdered cocoa
    • 2 cups flour
    • 5 oz. chopped, unsweetened baker’s chocolate


    Preheat oven to 350 degrees. In a mixer, mix butter until soft. Add sugar, eggs, and vanilla. Scrape down bowl. Add soda, salt, and cocoa, again scraping. Gradually add flour, and scrape again. Add chopped chocolate bar last. Drop teaspoon-sized dollop on ungreased pan. Bake 8-9 minutes. Let cool 2 minutes before transferring to rack.

    * Jen’s tip: Vary the recipe by substituting the chocolate bits with peanut butter chips, M&Ms, white chocolate chips, or nuts.
