Irish Colcannon

Elizabeth sent this traditional Irish recipe for a reason. "This wonderful dish is just in time for St. Patrick's Day," she writes.


  • 5 bratwurst
  • 1 lb. potatoes
  • 1 head cabbage
  • 1 onion, chopped
  • 1 stick butter, plus 3 Tbsp., divided
  • 1 cup milk
  • Salt and pepper to taste
  • Parsley for garnish


Cook bratwurst until done. Cut into slices. Set aside. Cook potatoes until tender. Set aside. Cook cabbage and onions in about 1-2 cups of water until tender. Drain. Put cabbage, onion, butter, milk, salt, and pepper into large mixing bowl. Add potatoes and mash all together. Add bratwurst slices and stir. Arrange mixture in large serving dish. Dot with butter and garnish with sprigs of parsley.

Serves 8 side servings or 4 main servings.
