    Hearty Breakfast Bake

Submitted by Amy Reason, of Nashville, NC

Amy believes in starting the day with a hearty, stick-to-your-ribs breakfast.

    Ingredients

    • 1 12-oz. package bulk pork sausage
    • 2 green onions, thinly sliced (about ¼ cup) OR â…“ cup chopped green or red bell pepper
    • 2½ cups frozen loose-pack hash brown potatoes
    • 2 cups shredded Swiss cheese
    • 1 cup Original Bisquick mix
    • 2 cups milk
    • â…› tsp. pepper
    • 5 eggs

    Directions

Heat oven to 400 degrees. Grease or spray with cooking spray a 9x13 baking dish. Cook sausage in a 10-inch skillet over medium-high heat, stirring frequently until no longer pink. Drain. Layer sausage, onions (or peppers), potatoes, and cheese in baking dish. Stir remaining ingredients in large bowl until blended and pour over ingredients in baking dish. Bake uncovered 35-40 minutes or until knife inserted in center comes out clean. Cool 5 minutes.

    Makes 12 servings.

Tip: To make this the night before, assemble in baking dish, then cover and refrigerate overnight. Uncover and bake at 400 degrees about 1 hour or until knife inserted in center comes out clean.
