    Grammy's Waffles

    The cornmeal in her grandmother's waffle recipe seems to be the ingredient that makes them so good, writes Gigi.

    "Best we can tell, the recipe is over 102 years old and it is the best!" she writes.


    • 2 cups flour
    • ¼ cup yellow cornmeal
    • ½ tsp. salt
    • 3 tsp. baking powder
    • 1 tsp. baking soda
    • 2 eggs, separated
    • 2 cups buttermilk or sour milk
    • 6 Tbsp. vegetable oil


    Sift together dry ingredients. Set aside. Add egg yolks to buttermilk and oil. Beat slightly. Add dry ingredients to liquid all at once and beat with rotary mixer until batter is smooth. Beat egg whites until stiff peaks form. Fold egg whites into batter very gently. Pour batter into a pitcher and do not stir afterward. Pour onto heated waffle iron and bake as directed.
