    Gooseberry Cheese Cake Recipe

    Nina prefers her cheesecake made with the less-common gooseberry. "For more gooseberry flavor," she writes, "double the berry mixture."

    Ingredients

    Gooseberry Topping

    • ¼ cup cornstarch
    • ¾ cup sugar
    • ½ cup water
    • 1 cup gooseberries

    Crust

    • 1½ sticks margarine
    • 2 cups graham cracker crumbs

    Cream Cheese Mix

    • 2 8-oz. packages cream cheese
    • 1½ cups granulated sugar
    • 1 tsp. vanilla
    • 8 oz. Cool Whip

    Directions

    Cream first three filling ingredients together. Fold in Cool Whip. Spread half of cream cheese mixture over crust, then all of cooled berry mixture. Spread remaining half of cream cheese mixture over berry layer. Top with graham cracker crumbs.

    If you can’t find gooseberries, substitute with canned cherries, as shown in our recipe, or choose your favorite berry.
