Georgia Corn Bread Recipe

Submitted by Marjorie Chase, Booneville, MS

Marjorie isn't sure why this recipe, which is popular among her friends, is called corn bread; there is no corn meal in it. No matter. It's easy to fix and it's fast, she says. And you already have the ingredients at home, so you don’t have to go shopping for anything.”

Ingredients

  • 1½ cup self-rising flour
  • 1 cup white sugar
  • 4 eggs; if large, use 3
  • 1 tsp. vanilla
  • 1 cup light brown sugar
  • 1 cup oil
  • 2 cups pecans

Directions

Mix all ingredients together in a bowl. Pour into 9x13 pan and bake at 350 degrees for 30-40 minutes. Cut into squares and serve.

Serves 8-10.
