    Fresh Pear Cake Recipe

    The longer this glazed cake stays in the refrigerator, the better the flavors blend to create a moist, tasty cake, says Patsy. "We make this recipe when we have pears, and sometimes we change it up and put apples in it," she says.

    Ingredients

    Cake

    • 3 eggs
    • 2 cups sugar
    • 1 cup oil
    • ¼ cup orange juice
    • 3 cups flour
    • ¼ tsp. salt
    • 1 tsp. soda
    • 1 tsp. cinnamon
    • 1 tsp. vanilla
    • 2 cups chopped fresh pears
    • 1 cup coconut
    • 1 cup chopped pecans

    Glaze

    • 1 stick butter
    • 1 cup sugar (for the glaze)
    • ½ tsp. soda
    • ½ cup buttermilk

    How to Make Fresh Pear Cake

    In a large bowl mix  cake ingredients in the order given. Bake in greased and floured tube pan at 325 degrees for 1 hour or until it's fully baked.

    To make the glaze, melt butter in a medium saucepan, stir in remaining ingredients, and bring to a gentle boil, stirring constantly. Pour glaze over hot cake in the pan. Let cake set for 1 hour before eating.
