Favorite Banana Bread

Shirley adds ground oatmeal to her banana bread to give it even more flavor.


  • 1 cup sifted flour
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 cup oatmeal (quick or regular)
  • ½ cup soft butter
  • 2 eggs
  • ¾ cup sugar
  • 3 ripe bananas, mashed
  •  cup milk (add 1 tsp. lemon juice or vinegar)
  • ½ cup nuts (optional)
  • 1 cup mini-chocolate chips (optional)


Sift flour with baking soda, salt, and add oatmeal (I like to grind the oatmeal in blender). Cream butter, eggs, and sugar. Add bananas, alternate flour mixture with milk, and mix just until moist, starting and ending with dry ingredients. Stir in nuts or chips if desired.

Pour batter into greased 9x5x3 bread pan or fill one dozen greased muffin tins ½ full. Bake 40-45 minutes at 350 degrees or muffins for about 20 minutes at 350 degrees. Cool on wire rack.

Makes 1 large loaf or 3 mini-loaves.
