"Everyone enjoys these cookies that we make," writes Deb. "One batch makes one dozen large cookies."


  • 1 cup vegetable shortening
  • 1½ cups powdered sugar
  • ½ cup plain applesauce
  • 2 tsp. orange extract
  • 12 (or 16) oz. white chocolate chips (the larger bag)
  • 1½ cups sweetened coconut flakes
  • ½ cup pecan pieces
  • 2 cups all-purpose flour (you can substitute if you have gluten allergies)
  • ½ tsp. sea salt
  • 2 tsp. cream of tartar
  • 2 tsp. baking powder
  • ¼ tsp. baking soda?


Cream the shortening, sugar, and applesauce. Add orange extract. Mix in chips, coconut, and pecans. Combine flour with the salt, cream of tartar, baking powder, and baking soda. Turn in flour mixture with shortening mixture. Mix well. Drop with an ice-cream scoop or measuring cup, a good ¼ cup (the size of a golf ball) of dough. Usually 6 fit nicely on a baking sheet.

Bake at 375 degrees for 10-12 minutes (maybe a minute or two longer). Use the middle rack of the oven. Check the cookies periodically. Cool 1 minute on the baking sheet, then remove to wire racks to completely cool.

Makes 1 dozen large cookies.
