    Danish Apple Cake

    Ethel was searching for a different sort of dessert for her 7-year-old son's birthday. Her son, now 32, still looks for these any time he comes for a visit.



    • 3 eggs
    • 2 cups sugar
    • 1¼ cup oil
    • 3 cups all-purpose flour
    • 1 tsp. baking soda
    • ½ tsp. baking powder
    • 1 cup chopped nuts
    • 1 cup coconut
    • 3 cups apples, peeled and diced
    • 1 tsp. vanilla


    • ½ cup butter
    • 1 cup brown sugar
    • ¼ cup milk
    • 1 tsp. vanilla



    Mix together eggs, sugar, and oil. Sift together flour, baking soda, and baking powder. Add both mixtures together. Add chopped nuts, coconut, apples, and vanilla. Mix well together. Bake 1 hour at 325 degrees in a bundt pan.


    Melt butter in saucepan. Mix in brown sugar, milk, and vanilla. Bring to a rolling boil. Boil 2½ minutes or a little longer to thicken. Spread or drizzle over slightly cooled cake. Add more nuts on top if you desire.
