Crock-pot Breakfast Strata

Lorna likes the convenience of having breakfast already cooked in the morning, especially when she's serving a crowd.

"It cooks all night in the crock-pot, and by the time everyone is up and ready for breakfast, it is ready to serve," she says. "How easy is that?"


  • 12 eggs, beaten
  • 1 cup milk
  • ½ tsp. dry mustard
  • Salt and pepper to taste
  • 1 lb. cooked and drained meat (bacon, sausage, ham)
  • 32 oz. bag shredded frozen hash browns
  • ½ cup onions, diced
  • ¾ lb. cheddar cheese, grated


Mix first 4 ingredients together. Layer in 3-quart crock-pot as follows: ½ of the potatoes on the bottom, ½ of the meat, ½ of the onion, ½ of the cheese, and ½ of the egg mixture. Repeat layers. Cook on low heat for 10-12 hours.

Serves 8-10.
