    Cranberry Cake a la Helga

    "My mom used to make this when I was young," writes Stacey. "It's a huge hit for the holidays." It's best eaten served with a hot butter sauce.

    Ingredients

    Cake

    • 1 cup sugar
    • 2 cups flour
    • 2½ tsp. baking powder
    • 3 Tbsp. melted butter
    •  cup milk or half & half
    • 1 egg
    • 2 cups whole cranberries, washed and picked over

    Butter Sauce

    • ½ cup butter
    • 1 cup sugar
    • ¾ cup milk

    Directions

    Sift sugar, flour, and baking powder together. Make a hole in the middle of the mixture and pour in melted butter, milk or half & half, and egg. Beat thoroughly. Add cranberries. Bake in 8- or 9-inch square pan at 350 degrees for 40 to 50 minutes.

    Cook butter sauce in double boiler until sugar is dissolved. Drizzle sauce over cake.
