Cottage Cheese Pancakes

"This is a great way for kids to have plenty of protein for breakfast as you are getting them off to school," writes Lonna. "It is also a terrific way to use up old cottage cheese."

She also suggests doubling the recipe to keep the extra pancakes in the refrigerator for quick snacks.


  • 4 eggs
  • ¼ tsp. salt
  • 1 cup cottage cheese
  • 2 Tbsp. oil
  • 1 cup flour, sifted


Mix all ingredients in a blender and blend on low speed until cheese curds disappear. Pour enough batter onto medium-heated griddle to make 4-inch pancakes. Cook a minute or two and turn when nicely browned. Cook until both sides are nicely browned and the pancake is cooked through. Serve immediately with butter and syrup or your favorite pancake topping.

Yields 8-10 pancakes.
