    Cheesy Brunch Casserole

    Lazy weekends are the perfect time for a leisurely brunch. Surprise your family with this dish, sure to lure them to the table. Jeanne uses breakfast basics — eggs and ham — to whip up a rib-sticking, tasty casserole.

    Ingredients

    • 4 slices white bread
    • 1 medium chopped onion
    • 1 cup sliced fresh mushrooms
    • 2 Tbs. melted butter or margarine
    • 1 cup chopped cooked ham
    • 1 cup (4 oz.) shredded cheddar cheese
    • 1 cup (4 oz.) shredded Swiss cheese
    • ½ cups milk
    • 1 Tbs. all-purpose flour
    • 4 large eggs, beaten
    • 1 Tbs. prepared mustard
    • ½ tsp. garlic salt
    • Parsley sprigs for garnish

    Directions

    Place bread slices in bottom of lightly greased 8-inch baking dish, set aside. Sauté onions and mushrooms in butter until tender; spoon over bread. Top with ham, then cheeses. Combine milk and next four ingredients; pour over cheeses. Cover and chill 8 hours. Remove from refrigerator and let stand at room temperature for 30 minutes. Bake at 375 degrees for 35 minutes or until set. Let stand about 10 minutes before serving. Garnish with parsley.

    Yields 4-6 servings.
