    Baked Corn

    Cindy has enjoyed this dish for so long that she can't remember which family member created it. But it originated with her family's garden harvests. "We just always had a garden and we always grew corn, and this was one of my favorite recipes," she says.

    Ingredients

    • 2 Tbsp. butter
    • 2 Tbsp. flour
    • 1¼ cups milk
    • 2 cups fresh, canned, stewed, or frozen corn
    • 1 Tbsp. sugar
    • Salt and pepper to taste
    • 2 well-beaten eggs

    Directions

    Melt butter in pan. Add flour and blend well. Add milk slowly and bring to a boil, stirring constantly. Add corn, sugar, salt, and pepper, and keep stirring. Add eggs, and mix thoroughly. Pour into a greased baking dish. Bake at 350 degrees for 25-30 minutes.

    Serves 4-5.
