There's something about spring that begs for meals containing farm-fresh vegetables. These recipes from our readers just may hit the spot at your house.

    Saucy Carrots

Eileen Litts, of Highland, NY, developed this recipe years ago because she and her husband like spicy food.

Asparagus with Red Bell Peppers and Shiitake Mushrooms

As a food writer, Victoria Wesseler, of Lebanon, IN, spends a lot of time in the kitchen, where she made up this recipe.

"We have 7 acres and we grow about half of our own food, so everything is fresh and wonderful," she says.

For variety, substitute the asparagus with garlic scapes or very thin green beans, she suggests.

    French Dressing

James Wilmoth, of Tomball, Texas, got this recipe more than 20 years ago from a New Zealand friend. Over the years, he's tweaked it to his own taste, and it's become a family favorite, as a dressing and as a grilling sauce.

Wilmoth encourages others to tweak it, as well. "If you like things hot," he suggests, "add a little cayenne red pepper."
